Also, talks/demonstrations from people with other expertise - panel beating, spraying, trim, upholstery, electrics.

Your local 'College of Knowledge', Tech (though some call themselves Unis nowadays), Further or Adult Education college may run such courses. Mine
did, and though it was very poorly taught in terms of the academic side, it provided lots of welding experience in different thicknesses of metal,
with practical advice. Academia may not be what you are after, but to 'forget' that we were supposed to be doing test pieces each week in the
different thicknesses and styles was unforgivable, when some of the students were looking for employment on the back of the course.
