reached that point in the rebuild where I want to move the diff etc to the new chassis and put the new rear spring on.
Do I actually need to dismantle everything, remove the hubs from the drive shafts etc to do this, or is it possible just to undo the prop shaft and move
the lot in one go?
hints and tips would be well appreciated.

I think you will need to separate the parts to do this. (I seem to recall that the diff has to come out of the chassis DOWNWARDS (because of the front
mounts).
Even if you could remove and reinstall in one lump, you'll find it rather heavy! And unless they have already been refurbished, you might well want to
check over items such as the swing spring mounting pad, spring eye bushes, not to mention rear trunnions and tie rod bushes.
(You COULD leave the drive shafts attached to the spring and just remove the diff separately I suppose, but see little point as it will be rather like
an octopus to reassemble; all arms wanting to go in different directions simultaneously!!!)
