Im considering adding uprated springs to my mk3, If I do will I need to use shocks with adjustable spring seats to allow for the fact that the springs will
be an inch or so lower?

Assuming that "uprated" means "stiffer" then no. The springs are lower to make the ride height of the car lower. If you want stiffer springs but
standard ride height, you are looking at the wrong springs. Moss/Triumphtune sell stiffer springs with standard ride height (or at least they did when
I last looked), if that's what you're looking for.
